Pasta with spicy tomato sauce is what I cook when I’m at home alone. It’s a perfect simple dish that you can try when you’re cooking for yourself, and it’s absolutely time & money effective. And healthy and diet friendly.
To cook pasta itself is easy, instructions are on every bag. For the sauce, I heat up a bit of olive oil in a saucepan, fry a small, finely chopped onion on it, then I add couple of chopped tomatoes, a chili pepper, black pepper, French herbs, crushed garlic and aprox. half cup of water and I let it steam for about 10-15 minutes.
You can blend the sauce if you don’t like to eat pieces of tomato skin. Or you can take the skin off before you start cooking – an easy trick is to make a cross cut on their tops and immerse them for a short while into the boiling water (can be the one where you’re busy boiling pasta). When you take them out, you can peel them easily.
The dish is nice with olives and/or a chopped green pepper – I like the green pepper crunchy so I add it only at the end of cooking. Serve with Parmesan or cheddar cheese.
