Although my children are not that fond of cooked veggies, this specific dish is their favorite. And it’s super fast and super easy.
For a family of 4 you will need:
3-4 chicken breasts
1 middle sized broccoli
80g grated cheddar cheese
1-2 spoons of flour
curry powder, sea salt & black pepper
1 spoon of olive or sunflower oil
Cut chicken in slices. Heat up the oil in a deep pan and add chicken. Season with curry powder, sea salt and black pepper. When roasted from all sides, add broccoli cut in bigger pieces and a cup of water. Bring to boil and let steam covered, the lid slightly open for steam to come out. Broccoli is soft in less than ten minutes. When soft, add cream and grated cheddar and warm up so that cheese melts. You can make the sauce thicker by adding 1-2 spoons of flour mixed with a bit of water. Boil shortly and serve with pasta.
